Our Easy Tomato Soup Recipe
We love warm, filling and flavour packed tomato soup during the chilly winter days.
As well as loving the taste, tomato soup comes packed with beneficial lycopene -- a red-hued nutrient that gives tomatoes their colour. Livingstrong.com explains that lycopene offers powerful antioxidant protection, which means that it seeks out and neutralizes reactive oxygen species, a type of molecule linked to the aging process.
We love our tomato soup, perfect for the autumn months, and easy to prepare. Hope you do too.
- 1 kg tomatoes
- 1 leek
- A pinch of chili
- 1 teaspoon of paprika
- 1 bay leaf
- 500ml our bone broth - Chicken or Beef
- A handful of olives finally chopped (these will add the saltiness tomatoes need)
- some basil leaves
Roast all the tomatoes and leek for 30 minutes to increase the flavour. Then add to a pot with the bone broth and bring to the boil. Blitz till smooth, sprinkle with the chopped olives and basil leaves and enjoy with a slice your favourite bread.
