Greek Beef Stew In Tomato Sauce is a Greek comfort food
Traditionally served with rice, spaghetti, mashed potatoes or crusty bread but if you are reducing the carbs cauliflower mash or quinoa would work well also
This recipe tastes even better the next day
Ingredients
¼ cup of olive oil
500g grams beef chunks
500ml BC Beef Bone Broth or BC Beef PHO Bone Broth
1 medium onion chopped
2 large garlic cloves chopped
60 ml red wine (whatever is sitting around will do)
3 tablespoons tomato paste
2 bay leaves dried
5 cloves
1 stick of cinnamon
500g vegetables cut into similar size as the beef
Method
Sear the beef chunks in olive oil
Add the chopped garlic and onions and cook until golden
Add the wine and cook the alcohol off
Stir in the tomato paste and spices
Add the Bone Broth and the vegetables
Cook the stew on medium heat for 1-2 hours until the meat is tender and vegetables have broken down and thickened the sauce
