Beetroot and Sweet Potato Soup
- Olive oil
- 1 large onion
- 1 cup of pasata or 1 tablespoon of tomato paste
- 2 medium purple sweet potato
- 4 large beetroot
- 500ml Broth & Co Chicken or Beef Bone Broth
Heat some olive oil and cook the onion until translucent. Add the pasata first and then the vegetables and Melbourne Bone Broth and a little water to cover all the ingredients. Bring to the boil, reduce heat and simmer until the root vegetables are soft - you can hasten the process by chopping them up. Blend until smooth and Enjoy!
