5 Minute Ramen and Mushroom Noodle soup
Ramen and Mushroom Noodle soup in 5 minutes
This is a go to recipe for when life is busy but nutrition is important.
You can prepare all the ingredients in a mason jar to take to work and just heat the kettle - I suggest you use a quarter of this recipe to take to work
Ingredients
6 tsp Vegan Broth with Chickpea miso and Mushrooms (Cremini, Lions Mane, Shiitaki & Reishi)
150g ramen noodles
100g soft tofu, cut into 1cm pieces
4 spring onions, thinly sliced diagonally
1 tsp Wakame flakes
1 L of hot water
Method
Step 1
Combine the miso and 1 L of water in a large saucepan over high heat. Bring to the boil.
Step 2
Reduce heat to medium. Add the ramen noodles and cook until the noodles are heated through and tender. Stirring as you go.
Step 3
Add the wakame in the last minute or so before serving
Step 4
Ladle into serving bowls and top with the tofu and sliced spring onion and serve
