Mini Beetroot and Cacao Muffins
Healthy snacking - Mini Beetroot and Cacao Muffins
Gluten free and sugar free these little wholesome muffins area great way to get nutritious Beetroot in they diet.
Ingredients
2 tablespoons of Vegease raw beetroot powder
175g gluten free self-raising flour
2 tbsp raw cocoa powder
2 free-range eggs
1/4 cup coconut milk
1 tablespoon of coconut oil
2 dates
1/3 cup of pumpkin seeds
Coconut oil
Method
Lightly grease a 12-hole muffin tin with coconut oil
Preheat oven to 180 degrees celcius.
Sift flour, VegEase Beetroot Powder and cocoa into a large mixing bowl.
In a food processor whisk the eggs and then add the dates and pumpkin seeds.
Follow with the coconut milk and blend until creamy.
Finally add the flour mixture.
Spoon mixture into muffin holes.
Bake for 20-25 minutes until well-risen.
Cool in tin for a few minutes then turn onto a rack.
