Creamy Cauliflower and White Bean Soup

CREAMY CAULIFLOWER WHITE BEAN SOUP

A perfect winter meal served with warm crusty bread and a big green salad.

This Creamy Cauliflower White Bean Soup is loaded with flavour and is harty enough to keep you feeling full.

Ingredients

Cups of Cauliflower, florets and stems

Extra virgin olive oil

Onion, peeled and chopped

Celery stalks, chopped

Carrot, peeled and grated

Garlic cloves, gratted

1 cup white beans, canned is fine

500ml bone broth

Parmesan cheese 

Toasted seeds - We used sesame seeds and pumpkin seeds

Herbs such as parsley and basil

HOW TO MAKE CAULIFLOWER SOUP

Cook onion, celery and carrot.  Saute for about 5 minutes.

Chop the cauliflower into into bite-size pieces, discarding any tough parts. Add to the pot.

Add the beans, bone broth and bring to a simmer

Reduce heat to low and simmer  for about 15 minutes, until cauliflower is soft.

Pure the soup

Serve soup topped with roasted Parmesan, Seeds and Herbs and a sprinkle of olive oil
