Zucchini Slices with Spinach Powder, Low GI and Gluten Free

 

Easy bake gluten free zucchini slices, low GI with added goodness. 

This is such an easy bake and we all have a version of a zucchini slice that our little ones love, yes even the fussy ones. 

It's a great little treat.

There is no white flour here so it's low GI and Gluten Free, it's high in protein and good fats so it will keep them full for longer. 

To make this lunch box friendly just remove the almond meal and add more coconut flour, hemp flour or sunflower meal.

Spinach has a high nutritional value and is rich in antioxidants. It is a good source of vitamins A, Folate, Niacin (B3), Thiamine (B1), Riboflavin (B2), Pyridoxine (B6), C and K and minerals such as magnesium, manganese, Iron and Calcium.

 

Ingredients

4 eggs

1/2 cup of Almond Meal

1/4 cup of Coconut Flour

2 Tbsp of Vegease Raw Spinach Powder (or your favourite)

2 Tbsp of Tapioca Flour

1 tsp of Baking Soda

2 zucchini, grated

1/2 cup of grated cheese or crumbled feta

 

Method

Step 1

Preheat oven to 175C

Step 2

In a large bowl beat the eggs until fluffy

Step 3

Sift the flours, VegEase Spinach Powder and baking soda together to combine and also to remove any lumps. Add to the eggs and mix through

Step 4

Add the zucchini and the cheese and stir to combine

Step 5

Grease a large leamington pan  30 x 20cm or 2 small pans

add the mixture and bake

This nourishing slice should be ready in 30 minutes for your family to Enjoy x
