Pumpkin Muffins With VegEase Pumpkin

 

2 cups of self-raising flour 

1 tbsp brown sugar

1 cup of milk

125g of melted butter 

1 egg

1⁄4 tspn of cinnamon

1⁄2 a cup of VegEase pumpkin 

1⁄2 a cup of sultanas 

Combine the dry ingredients, add the eggs and wet ingredients gradually.

Divide mixture into muffin trays and cook for 20 minutes in a pre heated oven at 200°C. Allow to cool and dust with a little icing sugar

Store in an airtight container in the fridge for up to 3 days and freeze up to 3 months.
