Carrot cup cakes with VegEase
VegEase Freeze dried vegetable powders is a clever way to include more vegetables into your children's diet, helping them develop their palate which is an investment for their future healthy eating habits.
- 3 cups blanched almond flour
- 2 teaspoon baking powder
- 1 tablespoon of carrot VegEase Powder
- ½ teaspoon salt
- ¼ cup melted coconut oil
- ½ cup raw honey
- 3 large eggs, at room temperature (to avoid the coconut oil from hardening)
- 1 teaspoons vanilla extract
Mix the dry ingredients and set aside.
Mix wet ingredients together, melted coconut oil, honey, eggs, vanilla extract until combined.
Add the wet ingredients to the dry ingredients.
Pour into cup cake cases. Bake at 175C for 20-25 minutes. Let the cupcakes cool on the tray for about 5 minutes, then remove to a wire rack to cool completely.
Once cooled decorate as desired.
Store in an airtight container in the fridge for up to 3 days and freeze up to 3 months.
