Chicken & Sweet Corn Soup with Ginger

Ingredients 

  • 1 chicken, cut in quarters
  • 1 tbsp soy sauce
  • 2 tsp grated fresh ginger
  • 1 clove garlic
  • 1 can of corn kernels
  • 2 eggs
  • 1 tsp sesame oil
  • 6 green shallots thinly sliced diagonally
  • Water

 Instructions

  1. Add the shredded chicken, corn, soy sauce, garlic and ginger to the broth.
  2. Cover the chicken in cold filtered water and bring to the boil. remove any impurities as they rise to the top. Turn the heat down and simmer for 45 minutes or until the chicken has cook through. remove from the broth and leave aside to cool slightly and then shred.  ( An quick option is to cook a chicken breast in 4 cups of Beefy Bone Broth - dilute 4 teapoons of Beefy in 4 cups of hot water)
  3. Add the chicken back to the broth along with the corn, soy, ginger and garlic.
  4. Whisk the eggs and gradually add 1-2 ladles of hot broth while whisking, this tempers the eggs.  Gradually add the eggs to the pot while stirring, this will thicken the broth and make it more lux.
  5. Add the sesame oil and half the shallot and stir to combine. Taste and season. Ladle the soup among serving bowls and sprinkle with the remaining green shallot. Serve immediately.
