A Warming Beef Bone Broth Casserole with Chickpeas and Cauliflower

Ingredients
2 tablespoons olive oil
1 onion, finely chopped
1/4 cauliflower
1 carrot, choped
½ - 1 teaspoon of chilli powder
2 garlic cloves, crushed
250ml beef bone broth
400g can crushed tomatoes
2 tablespoons tomato paste
400g can chickpeas, rinsed, drained
2 tablespoons finely chopped fresh flat-leaf parsley leaves
1 avocado, sliced
Method
- Heat oil in a large saucepan over medium heat. Add onion and garlic. Cook, stirring, for 3 to 4 minutes or until soft.
- Add cauliflower, carrot and chilli powder. Cook, stirring occasionally, for 2 to 3 minutes.
- Add tomato paste, tomato, chickpeas. Bring to the boil.
- Reduce heat to low. Simmer for 20 minutes or until mixture has slightly thickened. Divide bean mixture between bowls.
- Top with parsley and avocado.
- Serve with rice
