GINGERY BEEF & OYSTER MUSHROOM STIR-FRY

 

🥢 Beef & Oyster Mushroom Stir Fry (Quick, Healthy Ginger Beef Recipe)

If you’re looking for a quick, nutrient-dense dinner that doesn’t compromise on flavour, this beef and oyster mushroom stir fry is a perfect choice.

Combining tender strips of beef with earthy oyster mushrooms, ginger, and garlic, this dish delivers a powerful mix of:

INGREDIENTS:

  • 1/3 cup soy sauce or coconut aminos
  • 1 tspn  of Beefy Bone Broth Powder 
  • 3 tablespoons rice wine vinegar
  • 1 tablespoons tapioca flour
  • 2 teaspoons ground ginger
  • 1/4 teaspoon freshly-ground black pepper
  • 400g of thinly sliced beef, cut diagonally across the grain into thin strips
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 150g of oyster mushrooms sliced
  • 1 white or red onion sliced
  • 2 tablespoons of sesame seeds
  • water as needed

DIRECTIONS:

Heat 1 tablespoon of oil in a wok over med-high heat.

Add beef strips and saute for about 2-3 minutes until browned, while stirring

Remove the beef from the wok

Add remaining tablespoon of oil to the pan and the onions and stir fry for 1-2 minutes until they begin to soften. Add the Oyster mushrooms and cook for a further 1-2 minutes.  At this time add the ginger and garlic.

Finally add the broth, soy sauce, rice wine vinegar and black pepper and 1/2 a cup of water.

Return the beef to the wok.

Stir though the tapioca flour, stirring rapidly so that it dissolves and the sauce thickens.

Sprinkle with sesame  seeds and serve with your favourite noodles or rice dish
