Ingredients

  • 500g beef chuck
  • 1 cup hominy
  • 1 cup white beans
  • 750ml beef bone broth
  • 1 onion
  • 2 garlic cloves
  • 1 tsp smoked paprika
  • 1 carrot, diced

Method

  1. Brown beef.
  2. Add onion and garlic.
  3. Stir in paprika.
  4. Add hominy, beans and carrot.
  5. Pour over broth.
  6. Simmer 2 hours.
  7. Stir occasionally.
  8. Serve hot.

🇵🇪 Aguadito de Pollo (Peruvian Green Chicken Soup)

Serves 4

Ingredients

  • 500g chicken thighs
  • 1 litre chicken bone broth
  • 1 cup rice
  • 1 bunch coriander
  • 1 onion
  • 2 garlic cloves
  • 1 carrot, diced
  • Juice of 1 lime

Method

  1. Blend coriander with ½ cup broth.
  2. Cook onion and garlic.

Method

Method
